2 TB red wine vinegar 1 bunch of green onions diced
3 tsp Italian seasoning 1 yellow squash zucchini cut bite size
1/2 tsp salt 1 red bell pepper seeded and cut
1/2 tsp pepper 2 C penne pasta
1/2 tsp basil 2 tomatoes seeded cut
2 zucchinis cut bite size 8 oz shredded 4 cheese blend
In a small dish mix together oil, vinegar, Italian seasoning, salt, pepper and set aside.
Place zucchini, mushrooms, onions, bell peppers, in a sprayed 9x13 pan. Drizzle oil mixture over top stir and sprinkle the basil over the top. Bake at 350 for approx 35 minutes.
Cook penne until al dente. Add tomatoes and pasta to vegetable mix toss to coat sprinkle the top with cheese continue to cook for about 10 minutes or until the cheese is melted.
